Cinnamon Pull-apart Bread

This bread is delicious. I originally got the recipe from: Joy The Baker but I put my own spin on it so I am going to share my version with you :) (My variations from her will be in RED)

Ingredients for the bread:

2 3/4 cups plus 2 tablespoons all-purpose flour
1/4 cup granulated sugar
2 1/4 teaspoons (1 envelope) active dry yeast
1/2 teaspoon salt
1/4 cup Vanilla yogurt
1/3 cup fat free Milk or Unsweetened Almond Milk
1/4 cup water
2 large eggs, at room temperature
2 teaspoons pure vanilla extract

Ingredients for the filling:

1 cup granulated sugar
3 Tablespoons packed brown sugar
4 teaspoons ground cinnamon
1 teaspoon fresh ground nutmeg

4 Tablespoons unsalted butter, melted until browned

First you will make your bread dough:

Mix your flour, yeast, sugar, and salt together in a large bowl.

In a separate bowl whisk your eggs together. (we left our whisk in storage :P )

In another separate bowl mix your milk and vanilla together. Warm it in the microwave for 1 minute.

Pour your milk mixture into the dry ingredients and stir until combined.

Mix your eggs in until you have a kind of goopy mixture (below)

Then stir in your flour. The mixture will be pretty sticky but that is OKAY! Don’t add any more flour.

Grease another large bowl (you can use butter… I just used pam)

Cover and let rise for about 1 hour in a warm place :) In the meantime mix all of your filling ingredients together in a small bowl.

After your bread has risen for 1 hour punch it down!

Flour a flat surface (counter or table) and roll out your dough. If you also left your rolling pin in storage use a water bottle haha ;)

Get it as large as you can! Or as large as the space you have allows you to make it.

Melt your 4 tablespoons butter and spread it all over the top of the dough.

Sprinkle the cinnamon sugar mixture over the top of the dough.

Cut into 5 or 6 pieces

Stack them on top of each other…

Cut into squares

Smash the sections into your pan and let rise again for about 30 minutes. In the meantime preheat your oven to 350.

After the 30 minutes is up bake for about 30 minutes until the top is golden brown. You’ll notice Joy says that you need to wait until it is really golden brown and it is true or the center won’t be cooked! Have patience…it is so worth it in the end :) IMG_4562

Tip bread out onto a plate or whatever you have and pull apart to enjoy!

Tips from KJ:

You might think WHAT? A yeast bread with no butter or oil? It works I promise and swear it! :)

Adding the brown sugar made this really caramelized! It was so good and I will do it this way every time.

Make this for your husband when you are going to be gone for 4 days. He will be happy.

This bread may seem like it takes a while but it is so simple each step only takes a few minutes! I promise you’ll be happy you made it.
