Chocolate Heaven Brownies

WARNING these brownies are veeeeery chocolatey! They are not for the faint of heart or the person who “doesn’t really like chocolate very much” (aka my husband) If your husband does not like chocolate…and you don’t like sharing dessert these are for you! You can have as many chocolate heaven brownies as you want without having to give any up ;) (unless you have chocolate loving children…but this is not a problem for me)

You need:

10 Tablespoons room temperature butter
1 1/4 cup sugar
1 cup cocoa powder
2 teaspoons Vanilla
2 eggs
1/2 cup flour

2/3 bag of giant marshmallows (or 1 bag of small…smaller is better my friends trust me)

Pre-heat oven to 325

That is IT! Can you believe it? Hardly any ingredients at all!

First: mix your butter and sugar and cocoa powder together until creamy. Then put it in the microwave for 1 minute.

Next: Mix everything else in!

IMG_4839Spray an 8x8 pan and then dump your mixture in. Cook for about 20 minutes.

While baking cut your giant marshmallows into little pieces.

Take your brownies out and put the marshmallows all over the top.

Put back in the oven. Watch these CLOSE you don’t want them to burn just get nice and golden brown!

Wait until they cool and cut up and EAT. I promise if you like chocolate. (like you will eat any kind of chocolate anything rich, creamy, chocolate attack worthy chocolate…these are for you!)

Tips from Kj:

You can add chocolate chips to these! Either on top or mixed in to the batter. As usual we didn’t have them…you’ll find that for the next few months (probably the next 10) I’ll be a very thrifty food blogger. My hubby is in school and we are living on a very limited income. So my recipes are going to get more and more creative with our small amount of food/budget.

You don’t have to cook them as long as me with the marshmallows on top. I just really love a golden mallow.

You also don’t even have to put mallows on top. Just the brownie will make you happy. The marshmallow just adds a bit more joy :D

Easy as Pie…Hamburger Pie ;)

As funny as this sounds, Hamburger Pie is one of my favorite meals. Even though others might label it as simple or boring. I just love the combination of all of the flavors. It makes me happy. I also love it because it is quick and easy!

Ingredients:

1lb Hamburger
8 Potatoes
3 cloves garlic
1/2 of an Onion
1/3 cup Sour Cream
2 tablespoons butter
1 tsp onion powder
1 can corn
1 can tomato soup
1 cup of cheddar cheese

Pre-Heat oven to 350

Peel and chop your potatoes and boil them until they are soft

Chop your onion and grate your garlic (I just use my zester)

Cook your burger, onion and paste from 2 of the garlic cloves over medium-high heat until its cooked through.

Then mix the tomato soup and corn in with the meat and heat until it is warm.

Meanwhile take your potatoes off of the stove and drain them. (the next steps I forgot to take pictures of…sorry) To your potatoes add the rest of the garlic, the onion powder, the sour cream, and the butter. Mash them together until they are creamy. (Add more sour cream, or some milk if you feel like your potatoes are too dry)

Put the meat mixture in the bottom of an 8x8 inch pan. Then scoop the potatoes on top of the meat mixture.

Add your cup of cheese on the top.

Bake at 350 for about 10 minutes until the cheese is melted.

Serve with a salad! (this is our usual side dish for dinner..)

Tips from Kj:

Normally I love adding a can of green beans to this and some chopped tomatoes. (in the meat mixture) I didn’t have any so it was just corn this time. It is still delicious though!

You can also stick this in the microwave for 10 minutes if you don’t feel like turning on your oven.

I love having this with KETCHUP! :D

Hubby Homemaking Garlic and Parmesan Stuffed Chicken Breasts

Last Sunday was Hubby Homemaking day….or that is what we have decided to call it when my husband decides to make dinner :D (I personally think this should be a life long Sunday, Wednesday, and Friday tradition??…but that is just me haha) He really is awesome though and comes up with some amazing recipes!

So, he told me he was going to make dinner. I asked him what he was making? He said, “I think I’m going to stuff these chicken breasts with Garlic and Parmesan cheese.” I said, “Ok :)” It sounded good to me! While he did that I sat on the couch preparing things for my first day of teaching-I start on Tuesday! So it was really nice to have a break from cooking and just be able to focus on my preparation.

Here is his recipe:

Ingredients

3 Garlic Cloves
3 Boneless Skinless Chicken Breasts
1/4 C Parmesan Cheese

Cooked Spaghetti
Philadelphia Cooking Crème Savory Garlic
Almond Milk (or regular Milk)

First start your water boiling and cook your spaghetti noodles while you do everything else.

Next chop your garlic into small pieces….

Take your chicken breast and slice it right through the middle but not all the way through the other side. (I think this is called butterflying? If not oh well…I was pretty impressed with his skills)IMG_4759

after that take a picture of your cute hubby stuffing the chicken breasts :) This picture puts a smile on my face! IMG_4766

First add the garlic 1 clove’s worth for each breast.

Then an early “tip from Mark” you have to RUB it in!

After you have given your chicken a nice garlic back rub add enough parmesan cheese to make your  mouth water.

Close them up and sprinkle them with lemon pepper on one side. IMG_4769

Put the seasoned side down on the grill and then season the other side. IMG_4770

Cook for about 10 minutes or until the chicken is cooked through and the cheese is  nice and melted in the middle.

Mix 1/2 cup of your cooking crème with 1/2 cup of milk and warm up. Put pasta on plate…cover with the white sauce and then put your chicken on top. Serve with a delicious salad!

Tips From Mark:

If you have a real grill instead of a George Foreman…USE IT! I don’t have that luxury yet.

If you don’t want to mix the cooking crème with milk you don’t have to. We just do that to make it so we can use it twice…its still delicious!
